1 tablespoon peppermint extract

In a saucepan, combine 1 cup of milk and the chocolate chips; stir over low heat until melted. Stir in the vanilla. Pour 1/2 of the mixture into the prepared baking pan and let cool for 10 minutes.

In another saucepan, cook the white chocolate and remaining milk over low heat until chocolate is melted. Stir in the peppermint and green food coloring. Spread into baking pan over first layer. Let cool 10 minutes.

Pour remaining chocolate mixture into baking pan over the mint layer. Let cool. Cut into squares before serving.

10 Quick & Easy Ways to Make Ice Cream Interesting

!±8± 10 Quick & Easy Ways to Make Ice Cream Interesting

Everybody loves to eat ice cream in the hot weather, but have you ever wondered how you could make plain old ice cream more interesting? I am going to share with you 10 quick and easy ways to do just that. Providing you have the ingredients at hand, none of these ideas should take more than a few minutes to prepare.

01. Nuts - One of the easiest ways to spice up your dessert is to buy a bag of your favourite nuts or a bag of mixed nuts if you prefer. Put a little hole in the bag (but not big enough for the nuts to come out) and compress until all the air is removed, then take something hard and smash the nuts up in the bag. Simply sprinkle the broken nuts onto your ice cream and mix them in.

02. Strawberry, Coconut - Something I like to make which is really easy and the kids love, chop up some fresh strawberries and place in a mixer with some vanilla ice cream and then add a bag of coconut flakes. Mix for a few seconds but don't overdo it. This is really good inside chocolate eclairs.

03. Oooh, Saucy - Most people would use some sauces to liven up their dessert, but the usual chocolate or strawberry sauce can become a bit tedious. I like to use some sauces which are a bit different: apple sauce, lemon sauce, honey or syrup, mocha chocolate sauce, caramel sauce or rhubarb sauce.

04. Marshmallow, Chocolate & Honey - Take a bag of mini marshmallows and slowly mix them into some vanilla along with a crushed up bar of chocolate and a few drizzles of honey. Garnish with a sprig of mint. This idea is perfect if you are trying to impress party guests or even your partner.

05. Banana Splits - This is probably one of the easiest things to make but some people never do. Slice a peeled banana in half (lengthways) and place in a dish. Add a few scoops of your favourite flavour (vanilla is probably my favourite). Squirt a little squirty cream around the banana and ice cream then sprinkle a few broken nuts and drizzle a little strawberry sauce or honey over the top to finish it off.

06. Peanut Butter Jelly - One of Kathy's favourite things is peanut butter so I made this for her and she absolutely loved it. Take some vanilla ice cream and add a few spoonfulls of peanut butter and also a few spoonfulls of your favourite jelly, mix gently to combine, but not too much. Serve in a bowl with wafers and sprinkle a few chopped nuts over the top.

07. Apricot - If you are partial to apricots then this one is for you. Take a few dried apricots and chop into tiny pieces and mix into your favourite vanilla along with some apricot sauce. This is really good when your sat outside on hot, sunny days.

08. Cookies - Cookies are a really good snack, but cookie dough ice cream is much better. Either make your own chocolate chip cookie dough or use Nestle's Toll House ready made cookie dough and break it up into pieces and mix with some vanilla ice cream, delicious. You may also want to drizzle a little caramel sauce over the top too.

09. Fresh Mint - This is one of my personal favourites because I love the taste of fresh mint. Take about 6 or 7 sprigs of mint and chop very finely or use a blender (saves time) then mix into your vanilla ice cream. I like to place this back into the freezer for 30 minutes or so to allow the mint flavour to penetrate the ice cream.

10. Rum & Raisin - This is for adults only. Soak a couple of handfulls of raisins in some rum overnight then add the raisins and the remaining rum into your vanilla ice cream and mix until the ice cream turns a light brown colour (add a little more rum if needed). We recommend not driving after this one.

NutriSystem Desserts - How Do They Taste? Are They Really Good? What Are the Choices?

!±8± NutriSystem Desserts - How Do They Taste? Are They Really Good? What Are the Choices?

I get a lot of questions about NutriSystem's desserts. After all, getting to eat sweets is a big draw of this diet. And, sweets that are low in calories, fats, and carbs are pretty rare in a diet. But, how do they taste? Because what good is getting to eat desserts if they taste like cardboard or if your only choices are a few or undesirable ones? So, in the following article, I'll go over the NutriSystem dessert options, how they taste, and what your choices are.

Cakes: There are a couple of cake choices. These include the golden pound cake and the chocolate. Now, when I say cake, I don't mean the round, two layer variety. You don't get an entire, big round thing like you would on your birthday. You basically get a slice. The portions are small, but decent enough. And the taste is not too bad at all, although I prefer the golden. No, there's no icing on these. But, what do you expect? Its a diet. And, I'm just happy I'm getting to have my cake and eat it too.

NutriSystem Cookies: There are a few varieties here including chocolate chip, double chocolate almond, oatmeal raisin, peanut butter, and white chocolate chunk. You know how some dietetic cookies have a cardboard like texture and they crumble horribly and make your mouth dry so that you feel like you can never get enough milk? These are not that bad and there isn't that fake sugar aftertaste. I find the chocolate chunk too strong tasting (a chocolate cookie with chocolate chips added in is overkill, in my opinion.) but, the white chocolate is my favorite. It has a nice, nutty, but sweet flavor.

NutriSystem Protein Bars And Candy Bars: There are two types of bars here. Basically, there is a granola, protein bar type option that comes in the following flavors: chocolate nougat with peanuts and caramel (kind of like snickers); chocolate delight (kind of like 3 musketeers); strawberry shortcake (kind of like a strawberry granola bar); chocolate peanut butter (kind of like Reece's); and blueberry lemon. (This one is my favorite. It is so light, fresh, and indulgent and is unique and different.)

In terms of the candy bar type options, there is a chocolate crunch bar (like Nestle's crunch) and a chocolate mint (like Andee's candies.)

Biscotti: I am very fond of the biscotti. If you've ever had Starbucks biscotti, you know that this is a crunchy, but sort of light treat that often has a nutty taste. There is an almond option and a chocolate macadamia nut. Both are very good, but I like the almond better.

NutriSystem Brownies: There are two choices here but both of them are chocolate. One is more of a chewy bar type and the other has a liquid center that you microwave. The liquid one tends to get messy and the soft liquid in the middle can be sort of a surprise if you are not expecting it.

Cocoa And Chocolate Pudding: The company also offers cocoa / hot chocolate and a pudding. Both are good, but nothing really different tasting that what you could get at the grocery store. The real difference lies in the fact that the company has somehow removed the excess carbs, sugar, fat and calories, which is a good thing.

S'mores Recipes - From Classic to Mexican Variations

!±8± S'mores Recipes - From Classic to Mexican Variations

Although s'mores probably came into being not long after the commercial marshmallow was developed in the 1880s, the first published recipe appears in the 1940 Girl Scout Handbook. Today, it has been adapted into many interesting variations.

Good Old S'mores

Hershey's chocolate barmarshmallowsgraham crackersPlace half of a Hershey's® Milk Chocolate bar onto a graham cracker half. Carefully toast a marshmallow over a grill or campfire. After the marshmallow is toasted a nice golden brown, place it on top of the chocolate bar half. Sandwich it with a second cracker half and gently press it together. Enjoy! Comment: Use Nestle' crunch chocolate bar for nut lovers.

Melty S'mores

Hershey's chocolate barmarshmallowsgraham crackersaluminum foilSandwich marshmallow and chocolate between 2 graham crackers. Wrap in tinfoil. Place on top of fire and let it melt together nicely. Cookie S'mores

1 package Keebler Fudge Stripes cookies1 package large marshmallowsRoast your marshmallow over the campfire on your fire-stick. When marshmallow is done, place it between two cookies and gently pull the marshmallow off the stick. The cookies seem to melt in your mouth. Easy and very tasty! Comments: Not as rich as a slab of Hershey's chocolate used in the classic recipe.

Smothered S'mores

bag of semi-sweet chocolate morsalsbag of marshmallowssprinkles of all kindsMelt chocolate in aluminum pie plate or disposable bread tin. Place marshmallow on skewer and roll in melted chocolate. Then roll in your favorite topping. Topping ideas: crushed graham crackers, nuts, or colorful jimmies, shredded coconut, etc. Comments: If you don't want to bother melting chocolate chips, use Hershey's chocolate syrup instead.

Peanut Butter S'mores

graham crackersminiature Reese's peanut butter cupsmarshmallowsToast the marshmallow. Place one peanut butter cup on a graham cracker. Top with the toasted marshmallow and a second graham cracker. Comments: Try the new white chocolate Reese's peanut butter cup. Or use Andes Mints for mint lovers. Mexican S'mores

peanut butterchocolate chipsminiature marshmallowsflour tortilla (small)Spread peanut butter on tortilla, sprinkle with chocolate chips and marshmallows, then roll up the tortilla shell. Wrap in foil and twist foil ends. Cook on grill grate over your fire for about 5 minutes. Unwrap and indulge. Banana Boat S'mores

bananamini marshmallowschocolate chipsLeave banana in peel. Slice it horizontally, NOT in half, and NOT fully through, only through top of banana and peel. Open it up like a hot dog bun and put in chocolate and marshmallows. Wrap in tinfoil and heat over fire. Tips for Adults: I can't compete with the kids. They can down unlimited marshmallows and chocolate bars with impunity. My body's not made the same way (sigh). So, I try to make the best experience out of my one s'mores. Enjoy it with a hot cup of unsweetened herbal tea or sugar-free hot chocolate. You'll spare your system a sugar shock, and you can save the calories for that juicy steak tomorrow.
